The company will introduce food waste tech wINNOW TO HOTEL kitchens
Senator Hotels & Resorts moves towards «zero waste» through a pilot project in collaboration with Winnow Solutions which will be carried out at Playadulce Hotel. Winnow Solutions uses artificial intelligence (AI) to measure the amount and type of food wasted in the kitchens on a daily basis. Large companies like Hilton and Ikea have already implemented this system.
Daily, weekly and monthly reports elaborated by the AI help keep track of the amount of food discarded, while revealing exactly what is thrown away and how to cut costs and reduce contamination. Around a third of all food produced is wasted, accounting for 10% of global greenhouse gas emissions.
Winnow’s system uses a built-in camera and a digital scale placed under the food waste bin. With all these elements and the collaboration of the staff we will be able to identify the type of food discarded and then elaborate a report with all the details. Thanks to artificial intelligence, we can distinguish between over-cooked food and customer leftovers, making it possible to identify where costs can be reduced.
Senator Hotels & Resorts aims to cut food waste by 50%, while helping the environment by reducing emissions. Apart from cutting down costs, by using Winnow system we will improve and make kitchen workflow easier, and more efficient and sustainable.
If the pilot project performs as expected, the hotel group will gradually extend the Winnow technology across the remaining hotels, starting with Playaballena Aquapark & Spa Hotel or Playacapricho Hotel.
Included in Senator Hotels & Resorts’ Sustainability Plan, this action contributes to several United Nations Sustainable Development Goals as part of the 2030 Agenda.
